MORE: I restarted my system and the CAPT Monitor now says the printer is ready to print (no connection error anymore) but it still won't print.
When I send a print job, the CAPT Monitor will flash "Printing..." for a few seconds in the status line, then turn to "Stopped"

Plus - if I unplug the USB cable and re-plug back in, it will generate a "Connection error" which won't go away when I re-plug it back in.

Something with the USB stack?
