Sorry Gmail completely ignores this setting, and always leaves mail on the server.

To download messages again, you are meant to add "recent:" to the front of your pop username, and it will force the mail app to download the last 30 days again.

GMail may ignore this setting, but it works for Apple Mail, which is all that really matters. Apple Mail only needs to leave the mail on the server for a few extra minutes to resolve the race condition and give GMail a chance to grab it's copy too.
