I did the same but I copied the QuickLook plugin to my home Library before modifying it, to avoid modifying system files. In order for the system to use it, I also had to change the CFBundleIdentifier value to something other than 'com.apple.qlgenerator.office'. I used one of my domain names instead of com.apple.
