If you don't have a Hotmail account that allows forwarding...

i.e., if you have a free (completely anonymous) Hotmail account that doesn't allow forwarding, you can buy MailForward for $20:

Keep in mind that even if you change your Reply-To address on the iPhone to display your Hotmail address, replies sent from the iPhone still pass through the gmail SMTP server and your gmail address is traceable in the email headers. You can read your Hotmail email on the iPhone anonymously but, to reply with total anonymity you must still reply from the Hotmail website (or Entourage if you have a legacy account).

So, don't assume you can do all your gangsta sh*t on the iPhone and not be jacked by 5-0.
