That's a really ugly solution for anyone who likes to use the web interface as well as IMAP. It also doesn't fix the real problem with IMAP: unread messages appearing more than once, in All Mail as well as the inbox or some other folder. It would be much nicer if Mail.app let you subscribe to specific folders, as a lot of other email clients do.

You can subscribe/unsubscribe in Leopard

You can subscribe and unsubscribe to IMAP folders in Leopard. Select an IMAP folder in the left-pane, right-click and choose Get Account Info.

Unfortunately Gmail doesn't support UNSUBSCRIBE.

Surely you mean it does in Entourage or other email clients, but not in Mail, right? Or maybe your are you doing something to make it work for you.
