One cause of Exchange failure on iPhone/iPod Touch 2.0
I strongly recommend against using any email account over WiFi unencrypted.

In addition, I would also say one shouldn't be using any business email via non-SSL connections. It is just bad form, insecure, and quite frankly this whole SSL for email thing was figured out a LONG time ago.
While the OP is correct that Apple probably should check for non-SSL connectivity, really they should go to their IT department about fixing the huge glaring security hole in their email system. If Apple does allow autodetection of non-SSL Exchange accounts, I think they should pop up a message if that is the only way to connect. Something like "Hey, we can do this, but it is unsecure and a really really bad idea. Call your IT folks and tell them to get with the program!"

The IT department needs to be beaten over the head repeatedly with heavy blunt objects. NO remote email access in this day and age should be handled over non encrypted connections, especially wireless.
