Read PDF, Word, and Excel files on the iPhone via Safari iPhone
Sometimes it's annoying to have to use Mail on my iPhone to review a PDF, Word or Excel file I received a couple of days before. I wanted to have permanent access to some of my inportant files (roadmaps, notes, lists etc.) even when I can't go online. All you need is a jailbroken 1.1.3 (or newer) iPhone, an FTP client on your Mac, and the "Safari 1.1.3 Patch" for your iPhone (see the Big Boss' repository: "Adds file:// support for local files viewing to Safari.")

For PDF: Use your FTP client to create a new folder on your iPhone in /var/mobile/Media/. Name it PDF and drag your PDF files into it. Some of them have to be renamed to meet the usual URL naming conventions. This means: no spaces, no umlauts, etc. I dragged a file named regex.pdf in there. Now I only have to type in the following URL in Safari on the iPhone:
file:///var/mobile/Media/PDF/regex.pdf
Safari can display PDF, Word, Excel, and any HTML file you put in the Media folder (or in a sub-folder of Media). Additionally, you can save this to your home screen, or as a bookmark, for easy access.

Additional hint: instead of typing the URL in Safari on the iPhone, you can do that on Safari on your Mac and save it as a bookmark for later syncing to the iPhone.

You can do the same thing with filemarkmaker (http://www.magnetismstudios.com/MonkeyBusinessLabs/FilemarkMaker) without jailbreaking your phone. Just be aware that after about 4 MB of bookmarks made this way, Safari on the iPhone/touch gets very flaky.

Use special POP mail account

If you don't want to jailbreak the phone, I'm thinking you could create a gmail (or any other email) account that you access with POP. You could just email the documents you want handy to that POP account and download them to the phone.

I haven't tried it, but I think it should work.

I confirm that the GMail account is THE solution to read Word and Excel files on the iPhone. I use it daily.

Jail Breaking the phone opens up sooo many possibilities. I just managed to get the iphone running a compact web server called lighttpd to serve local (on the iphone) pdfs to me whenever I want with no bookmarking or emailing. One of the first things I wanted to do when i looked at an iPhone was load up safari and point it at PDF's online. They display just fine.

I don't own one yet (am waiting for GPS either built in or a dongle) I don't know about file handling on the iphone but any web server to host the files should work as well.

the hint is meant for those situations when you're unable to get online (for example, on an iPod touch when there's no wifi availlable).

I'm using my gmail account for this (works very well) as I'm afraid to jailbreak my iPod

Extra hint: you don't need to access gmail using 'pop' to read your email offline! The iPod/iphone saves all emails for offline reading if they have been downloaded. So, to read an email offline, just open it once, then disconnect.
