Hide the IMAP Gmail Spam Count folder in Mail.app Apps
Any easy way to get rid of the Gmail spam folder count within Mail is to set up a filter in the Gmail web interface. In the "Has the words field," enter in:spam and "mark as read" as the action (if you don't have the "mark as read" option, try changing the language to English (US)). The spam folder count should then be gone.

You can refine the search further if you wish by adding words to the "Doesn't have" field, (e.g. your name, your work etc...). This will then highlight any messages that may have been marked as spam erroneously. Now if only someone can figure out a way to do the same with the All Mail folder!

What about "in:inbox" in the "doesn't have" field?!? ;)

Hmm... still doesn't work for me. I can't see the "Mark as read" option, and I positively have English (US) chosen as my language.

to see the "mark as read" button you have to go past the first page of the filter creation process.

I do go past the first stage (and the warning from gmail). Still nothing.

Could it be that I'm at work using IE on a Windows box?

I'm letting google manage my domain's email, so I get a gmail looking interface, but things are slightly different for me. For some reason, I don't get "mark as read" as an option. I tried with both safari and Firefox on OSX, and confirmed that I do see it on a regular gmail account.

Bummer.

Correction, I was able to get the new gmail 2 interface for gmail for domains or gmail for Google Apps. Login as your domain's admin and go to "domain settings" and make sure control panel is set to "Next generation (US English only) and the "turn on new features" and "automatically add new google services" checkboxes are set.

Once you've done this, you'll need to wait a few days and then restart your browser to see the new gmail features.
