10.5: Monitor Time Machine via Instruments Apps
If you look at the Console when you are running Time Machine, you almost see nothing more than just what the process name is, when it started, and how much data there is going to be backed up. However, I found a way to monitor a bit more about what is actually going on -- what files are copied, etc.

If you installed the Developer Tools, and you should, since there are all kind of little gems hidden there, you will find a program called Instruments within the Developer/Applications folder. With this program, you can monitor all kinds of things that are happening. In my case, I chose the File Activity option on the startup screen, and then used the Attach Process button to atatch the backupd unix application (this is the actual Time Machine backup at work). Click the Record button, and lo and behold, you have a more precise view of the files being copied. Instruments can do lots more, obviously; this is but one example of how to put it to use.

In my version of Intruments (that came with Leopard) the Attach Process function is from the Default Target popup menu, not a button.

Ok, now how do you attach to the backupd process? It only seems to show me the process of my user. And backupd is a root process. It is not in the list.

It looks like you can only choose to monitor it when Time Machine is running. I guess the list only contains currently running processes.

Am I right in saying that therefore the only way to find out which files TM is backing up is to start Instruments every time before TM runs (at least for the first 24 hours)?
I really would like to avoid to constantly backing up some huge temp files some application is creating (and TM is not smart enough to avoid). Since once these files are in TM, I don't get them out again, even if I exclude them later, until they fall off the table once my drive gets full.

Just FYI, you can remove all versions of folders and files from Time Machine backups. Check out this article:
